La présente demande se rapporte à un procédé d’obtention d’une composition de polysaccharides de levure comprenant des β(1,6)-glucanes, de préférence également des mannanes et des α-glucanes comprenant au moins une étape de fractionnement d’une composition pariétale de levure(s) et d’extraction d’une fraction insoluble, et au moins une étape d’extraction d’une fraction soluble à partir de la fraction insoluble obtenue à l’étape a). La présente demande se rapporte enfin à une composition à visée thérapeutique, humaine ou vétérinaire, pour le traitement des pathologies gastro-intestinales associées à des microorganismes pathogènes ainsi qu’à son utilisation non thérapeutique pour l’amélioration du confort intestinal.
