Abstract

Machine for stripping skin, sinew rind and other waste from meat is of the type in which the meat is fed towards a stripping blade by frictional engagement with a rotating, toothed, driving wheel. The blade is fixed to a mounting which is pivotally suspended to allow the blade to adopt automatically the most effective cutting angle. The machine is equipped with a powered, rotary brush to clean the toothed wheel continuously as the machine is operating. The self adjusting mounting of the blade provides efficient cutting and this is combined with continuous, rigorous cleaning of the driving wheel. This combination ensures a high output from the machine.

Par contre, Si l'on augmente l'angle de coupe en changeant la position de 14 et 15 autour de l'axe 8, pour obtenir une plus grande épaisseur de matière à enlever, (comme représenté en traits interrompus;,le couteau 2' prend un angle non convenable à l'exécution du travail.La force de résistance à l'avancement de la viande à traiter devient telle qu'elle peut amener la rupture des leviers 14 ou 15, autrement dit, la force appliquée par ltépaisseur de matière enlevée sur la face courbe 25 du porte-couteau 1',n'est plus compensée par la matière non enlevée dont la pression agit en sens inverse de celle appliquée en 25, il y a coincement. La force appliquée qui tend a' à écarter 1' de la surface cylindrique du tambour 3, devient trop importante et risque la rupture, par cisaillement, soit de l'axe 8, autour duquel se déplacent angulairement les leviers solidaires 14 et 15, soit encore la rupture de ces derniers.
