Par contre, Si l'on augmente l'angle de coupe en changeant la position de 14 et 15 autour de l'axe 8, pour obtenir une plus grande épaisseur de matière à enlever, (comme représenté en traits interrompus;,le couteau 2' prend un angle non convenable à l'exécution du travail.La force de résistance à l'avancement de la viande à traiter devient telle qu'elle peut amener la rupture des leviers 14 ou 15, autrement dit, la force appliquée par ltépaisseur de matière enlevée sur la face courbe 25 du porte-couteau 1',n'est plus compensée par la matière non enlevée dont la pression agit en sens inverse de celle appliquée en 25, il y a coincement.
