"Machine à écorcher les pièces de viande" On utilise les machines d'écorchage pour séparer les peaux de la viande elle-même, ou pour en séparer les aponévroses. D'une façon générale, ces machines d'écorchage comportent un rouleau rotatif denté monté sur un bâti, un patin de pression lui est associé et sert de support à une lame d'écorchage. Cette lame, ou couteau, est destiné à sectionner et à séparer la peau du morceau de viande au cours du déplacelement manuel de ce dernier. Ces machines présentent de nombreux inconvénients, l'encrassement rapide des dents du rouleau entraîneur par exemple. Inconvénient mal résolu par un procédé employant l'air comprimé. Un autre inconvénient, aussi important que le premier, est inhérent à la forme elle-même des dents du rouleau entraîneur dont l'angle aigu du fond retient trop facilement les déchets.
On peut encore citer le guidage défectueux ou aléatoire du couteau destiné à trancher les peaux dont la position de coupe n'est pas toujours adaptée au travail à effectuer
Le but des perfectionnements apportés à ces machines est d'obvier à ces imperfections. Un dispositif de suspension de la lame, 'ou couteau, permet à ce dernier de prendre automatiquement l'angle de coupe bien adapté au genre de travail à effectuer. Un autre dispositif permet un nettoyage aussi parfait que possible des dents du rouleau entraîneur, ce nettoyage étant permanent pendant le fonctionnement de la machine. La modification du profil des dents du rouleau entraîneur complète les présents perfectionnements, perfectionnements qui autorisent une efficience aussi parfaite que possible de l'ensemble des organes composant une machine à écorcher la viande.
Les perfectionnements, qui vont être décrits, apporte-ront aux types de machines définies plus haut, une plus grande perfection dans le travail à accomplir en même temps qu'un gain de temps d'entretien important ainsi que la possibilité de traitement des produits d'épaisseur et de texture très irrégulières.
Les perfectionnements apportés sont au nombre de trois, le premier concerne l'adjonction d'un rouleau-brosse au rouleau entraîneur. Le deuxième concerne la modification du profil des dents du rouleau entraîneur et le troisième, non moins important, concerne le mode de suspension du couteau et de son support mécanique.

La figure 1 est une vue en plan et sans couvercle d'une machine d'écorchage suivant l'invention destinée à enlever la peau des pièces de viande. La figure 2 est une vue schématique et en coupe partielle selon B B de la figure 1, montrant la position de la lame ainsi que ce-lle du rouleau-brosse. La figure 3 est une vue montrant la forme du profil des dents du rouleau entraîneur, modifiée selon une des caractéristiques de l'invention. La figure 4 est une vue semblable à la figure 2, mais à plus grande échelle, du rouleau-brosse et mécanisme de commande de la lame de coupe.
La figure 5 représente schématiquement, dans une autre forme de réalisation suivant l'invention, le porte-couteau dans une de ses positions extrêmes ainsi que la position, 1[deg.] de l'axe forme de réalisation illustrée sur les figures 1 à 4, le portecouteau 1 et le couteau 2 sont articulés de façon libre sur l'axe 23 du levier 14. On remarquera que la semelle 19 du portecouteau 1 a le même rayon de courbure que la surface cylindrique du rouleau entraîneur 3. Pendant le fonctionnement de la machine, cette disposition, associée au degré d'oscillation libre du porte-couteau 1 et du couteau 2 sur l'axe de support 23, permet
à l'ensemble de diriger automatiquement son angle de coupe selon la texture de la surface de la pièce de viande en cours d'épluchage. Le plan du bord de. coupe de l'ensemble 1 et 2 est déterminé selon les besoins par l'action manuelle de réglage d'approche en épaisseur enlevée, par le changement de position angulaire des bras de leviers 14 et 15, sur leur axe fixe d'articulation
8. L'épaisseur de la couche enlevée ne changera pas mais, seule, la direction de coupe de la lame 2 sera modifiée selon la texture et la dureté de la couche à enlever, ce qui représente un grand progrès sur les machines antérieures.
Un autre perfectionnement de la machine suivant l'invention consiste dans la modification du profil des dents 20 du rouleau entraîneur 3, dont la démonstration a déjà été faite plus haut mais qui va être complétée par les explications qui vont suivre sur l'action du rouleau-brosse dans les cavités desdites dents.
Encore un autre perfectionnement consiste dans l'adjonction d'un rouleau-brosse 5, d'une part, et dans son action sur les dents du rouleau entraîneur 3, d'autre part. Le rouleaubrosse 5 comprend des rangées de poils en polyamide, de raideur convenable, disposées en bandes longitudinales 21, séparées les

5 et le sens de leur déplacement s'opère donc en sens inverse
du mouvement de rotation du rouleau entraîneur 3. Le porte-couteau 1 et le couteau 2 sont montés libres de mouvement de rotation angulaire sur l'axe de support 23, (une partie du levier
14 a été supprimée pour la clarté du dessin). Le levier 14 est solidaire du bras de levier 15 et leur axe d'oscillation est en 8, l'ensemble des leviers 14 et 15 reçoit un mouvement d'avance et de recul par la mise en rotation de la vis 12, associée au bras de levier 25 et à l'axe 18 qui peut être muni d'un amortisseur
de chocs, une butée fixe 22, limitant le déplacement dans un seul.sens. La manoeuvre manuelle de l'ensemble des bras de leviers 25, 15 et 14, de même que du porte-couteau 1 et du couteau 2 qui leur sont mécaniquement associés s'opère par la rotation
de l'arbre 13 guidé par le palier 10.
La figure 3 est une vue à grande échelle d'une des dents 20 du rouleau entraîneur 3 des figures 1 et 2. Contrairement aux réalisations antérieures, le fond des dents 20 est arrondi en 17, de façon que l'action des poils du rouleau-brosse 5 soit plus efficace. On notera qu'après expériences, l'angle 16 a été fixé à 60 degrés et le rayon de fond de dent 17 à 0,5 mm ; ces précisions sont importantes, du point de vue de l'entraînement de la pièce de viande, d'une part, et de l'action efficace de nettoyage des poils du rouleau-brosse 5, d'autre part. La figure 4 est une vue schématique à grande échelle qui réunit les trois perfectionnements apportés par l'invention aux machines à éplucher ou écorcher les viandes.
Suivant la de rotation du rouleau entraîneur, 2[deg.] de l'axe d'oscillation de la commande de position du porte-couteau ainsi que les positions respectives des axes précités. La figure 6 représente la deuxième position extrême du porte-couteau de la forme de réalisation suivant la figure 5 et laisse voir l'action de pression de la pièce de viande sur l'une et l'autre face du porte-couteau.
La machine de la figure 1 comporte le porte-lame 1
et la lame de coupe 2, le rouleau entraîneur denté 3 et le rouleau-brosse 5. Les roulements des rouleaux sont figurés en 4. L'ensemble des rouleaux 3 et 5 et du support de lame 1 est supporté par les joues 6 du châssis 7. Un motoréducteur 11 commande l'ensemble des rouleaux par la chaîne conventionnelle 9, dans un mouvement de rotation dans le même sens. La position
de l'angle du bord de coupe du couteau 2, commandée par l'axe 8 du support de couteau 1, résulte de la coopération du levier 12, mis en mouvement d'avance et de recul par une vis 10, et de la commande manuelle 13. Il est à noter que le mouvement de rotation communiqué à une extrémité de l'arbre 8 l'est également à son extrémité opposée, par un axe ou arbre invisible sur la figure ; la commande manuelle de l'angle de coupe peut se faire des deux côtés de la machine.
La figure 2 illustre la position relative du rouleau entraîneur 3 et du rouleau-brosse 5, ainsi que la commande manuelle du porte-couteau trancheur 1 et donc du couteau 2. Les rouleaux 3 et 5 sont entraînés en un mouvement de-rotation dans le même sens, indiqué par les flèches, par une chaîne conventionnelle 9 associée au motoréducteur 11. Ce même sens de rotation unes des autres par des espaces vides.
La longueur des poils des brosses 21 est telle que, pendant la rotation du rouleau-brosse 5, les rangées successives de poils 21 se courbent en frottant vigoureusement la surface du rouleau entraîneur 3. Il est utile de rappeler que la forme courbe du fond des dents 20 permet aux poils 21 du rouleaubrosse 5 d'y pénétrer, d'y extraire les détritus et, pendant
leur redressement brusque, de précipiter ces derniers dans un
bac prévu à cet effet. Autrement dit l'action de nettoyage des dents 20 du rouleau entraîneur 3 se produit le plus énergiquement quand les poils 21 se redressent après la contrainte de courbure qu'ils ont subi contre le rouleau entraîneur 3, qui est animé d'un mouvement de rotation dans le même sens que celui du rouleau-brosse 5, ce qui a pour effet et conséquence que les poils de brosse 21 ont un mouvement relatif inverse par rapport à la surface du rouleau entraîneur 3 ; les déchets seront donc propulsés en 24, dans le sens de la flèche.
On se reportera ensuite à la figure 5, qui représente schématiquement, dans une variante de réalisation de machine suivant l'invention, la position des différentes pièces mécaniques qui composent l'ensemble de tambour d'entraînement 3 de la pièce de viande en cours de traitement, après modification de position des différents organes mécaniques, avec la vue en coupe du porte-couteau 1 et du couteau 2. On remarquera les positions respectives des composants 3, 8, 28 et 1 ; en effet on peut voir que le porte-couteau 1 n'est,dans ce cas,pas articulé sur le levier 14 mais en est solidaire. On observera ensuite que les
axes de rotation 26 et 8 sont sur un même plan horizontal et à une distance telle que l'arc de cercle 33, décrit par le dépla-cement angulaire.des leviers 14 et 15, du porte-couteau 2 et de la lame 28 du couteau 2, passe par le centre de rotation 26 du rouleau entraîneur 3 ; la distance Centre 26 et 8 est donc fonction du diamètre du rouleau entraîneur 3. Ainsi les forces de pression appliquées sur les faces 31 et 32 du porte-couteau 1, par les viandes traitées,s'équilibrent dans toutes les positions angulaires, du minimum au maximum de la course 33.
On se reportera ensuite à la figure 6 qui laisse observer que, quand on augmente l'angle 33 (par l'action de déplacement angulaire des leviers 14 et 15) qui passe par le centre de rotation 26 du tambour entraîneur 3 et du tranchant 28 du couteau 2, la surface cylindrique 32 du porte-couteau 1 est parallèle à celle du rouleau entraîneur 3, ce qui a pour effet
une bonne distribution équilibrée des forces qui s'exercent
dans le sens des flèches a et b sur les surfaces opposées 31 et
32 du porte-couteau 1, pendant le travail de tranchage. Le porte-couteau 1 et le couteau 2 sont alors dans la meilleure position de tranchage sans efforts exagérés et ceci dans toutes les positions intermédiaires entre le minimum et le maximum du déplacement angulaire du porte-couteau 1 et de son couteau 2. Cette disposition des organes mécaniques de la machine à écorcher les pièces de viande a, de plus, permis d'abaisser considérablement la puissance de la force motrice d'entraînement de l'ensemble, donc du prix de revient et du poids de ce dernier.
Les dispositifs découlant des perfectionnements décrits dans le présent brevet apporteront une plus grande rapidité d'exécution dans les travaux de boucherie, charcuterie,
etc, de même qu'une plus grande facilité de nettoyage sanitaire des organes des machines à écorcher les pièces de viande et à écailler les poissons.
Il doit être entendu que la présente invention n'est en aucune façon limitée à la forme de réalisation décrite cidessus et que bien des modifications peuvent y être apportées sans sortir du cadre du présent brevet.
REVENDICATIONS
1. Machine à écorcher les pièces de viande en séparant ces dernières des aponévroses, couennes et autres déchets, caractérisé en ce qu'elle comprend un dispositif de suspension permettant au couteau de prendre automatiquement l'angle de coupe approprié, d'une part, et un dispositif de nettoyage permanent et à sec d'un rouleau d'entraînement des pièces de viande pendant .tout le temps de fonctionnement de la machine, d'autre part.
2. Machine à écorcher les pièces de viande selon la
"Machine for skinning pieces of meat" Skinning machines are used to separate the skins from the meat itself, or to separate the aponeuroses. Generally, these peeling machines have a toothed rotary roller mounted on a frame, a pressure pad is associated with it and serves as a support for a peeling blade. This blade, or knife, is intended to cut and separate the skin from the piece of meat during manual movement of the latter. These machines have many drawbacks, such as the rapid clogging of the teeth of the driving roller. Disadvantage poorly resolved by a process using compressed air. Another disadvantage, as important as the first, is inherent in the shape itself of the teeth of the driving roller, the acute angle of the bottom too easily retains the waste.
Mention may also be made of the defective or random guiding of the knife intended for slicing skins, the cutting position of which is not always suited to the work to be carried out.
The aim of the improvements made to these machines is to obviate these imperfections. A blade suspension device, or knife, allows the latter to automatically take the cutting angle well suited to the type of work to be performed. Another device allows the teeth of the driving roller to be cleaned as perfectly as possible, this cleaning being permanent during the operation of the machine. The modification of the profile of the teeth of the driving roller completes the present improvements, improvements which allow the efficiency as perfect as possible of all of the components of a machine for skinning meat.
The improvements, which will be described, will bring to the types of machines defined above, greater perfection in the work to be performed at the same time as a significant saving in maintenance time as well as the possibility of processing the products of 'very irregular thickness and texture.
There are three improvements, the first concerns the addition of a brush roller to the driving roller. The second concerns the modification of the profile of the teeth of the driving roller and the third, no less important, concerns the mode of suspension of the knife and its mechanical support.

FIG. 5 schematically represents, in another embodiment according to the invention, the knife holder in one of its extreme positions as well as the position, 1 [deg.] Of the axis, embodiment shown in FIGS. 1 to 4, the knife holder 1 and the knife 2 are articulated freely on the axis 23 of the lever 14. It will be noted that the sole 19 of the knife holder 1 has the same radius of curvature as the cylindrical surface of the driving roller 3. During operation of the machine, this arrangement, associated with the degree of free oscillation of the knife holder 1 and the knife 2 on the support axis 23, allows
the assembly to automatically direct its cutting angle according to the texture of the surface of the piece of meat being peeled. The plan of the edge of. section of the assembly 1 and 2 is determined as necessary by the manual action of adjusting the thickness approach removed, by the change of angular position of the lever arms 14 and 15, on their fixed axis of articulation
8. The thickness of the removed layer will not change, but only the cutting direction of blade 2 will be changed depending on the texture and hardness of the layer to be removed, which represents a great improvement on previous machines.
Another improvement of the machine according to the invention consists in modifying the profile of the teeth 20 of the driving roller 3, the demonstration of which has already been made above but which will be supplemented by the explanations which will follow on the action of the roller. -brush in the cavities of said teeth.
Yet another improvement consists in the addition of a brush roller 5, on the one hand, and in its action on the teeth of the driving roller 3, on the other hand. The roller brush 5 comprises rows of polyamide bristles, of suitable stiffness, arranged in longitudinal strips 21, separated by

5 and the direction of their movement therefore operates in the opposite direction
of the rotation movement of the driving roller 3. The knife holder 1 and the knife 2 are mounted free of angular rotation movement on the support axis 23, (part of the lever
14 has been deleted for clarity of the drawing). The lever 14 is integral with the lever arm 15 and their axis of oscillation is at 8, the set of levers 14 and 15 receives a movement of advance and retreat by the rotation of the screw 12, associated with the arm lever 25 and axis 18 which can be fitted with a shock absorber
impact, a fixed stop 22, limiting movement in a single sense. The manual operation of all the lever arms 25, 15 and 14, as well as the knife holder 1 and the knife 2 which are mechanically associated with them, is effected by rotation
of the shaft 13 guided by the bearing 10.
Figure 3 is an enlarged view of one of the teeth 20 of the driving roller 3 of Figures 1 and 2. Unlike previous embodiments, the bottom of the teeth 20 is rounded at 17, so that the action of the bristles of the roller -brush 5 is more effective. It will be noted that after experiments, the angle 16 has been fixed at 60 degrees and the tooth bottom radius 17 at 0.5 mm; these details are important, from the point of view of the entrainment of the piece of meat, on the one hand, and of the effective action of cleaning the bristles of the brush roller 5, on the other hand. Figure 4 is a large-scale schematic view which combines the three improvements made by the invention to machines for peeling or skinning meat.
According to the rotation of the driving roller, 2 [deg.] Of the axis of oscillation of the knife holder position control as well as the respective positions of the aforementioned axes. Figure 6 shows the second extreme position of the knife holder of the embodiment according to Figure 5 and shows the pressure action of the piece of meat on both sides of the knife holder.
The machine of figure 1 comprises the blade holder 1
and the cutting blade 2, the toothed driving roller 3 and the brush roller 5. The roller bearings are shown in 4. The assembly of the rollers 3 and 5 and of the blade support 1 is supported by the cheeks 6 of the chassis 7. A geared motor 11 controls all of the rollers by the conventional chain 9, in a rotational movement in the same direction. The position
of the angle of the cutting edge of the knife 2, controlled by the axis 8 of the knife support 1, results from the cooperation of the lever 12, set in advance and backward movement by a screw 10, and of the control manual 13. It should be noted that the rotational movement communicated at one end of the shaft 8 is also at its opposite end, by an axis or shaft invisible in the figure; manual control of the cutting angle can be done on both sides of the machine.
FIG. 2 illustrates the relative position of the driving roller 3 and the brush roller 5, as well as the manual control of the slicing knife holder 1 and therefore of the knife 2. The rollers 3 and 5 are driven in a de-rotational movement in the same direction, indicated by the arrows, by a conventional chain 9 associated with the geared motor 11. This same direction of rotation of each other by empty spaces.
The length of the bristles of the brushes 21 is such that, during the rotation of the brush roller 5, the successive rows of bristles 21 are curved by vigorously rubbing the surface of the driving roller 3. It is useful to remember that the curved shape of the bottom of the teeth 20 allows the bristles 21 of the brush roller 5 to penetrate there, to extract the detritus there and, during
their abrupt recovery, to rush these into a
tray provided for this purpose. In other words, the action of cleaning the teeth 20 of the driving roller 3 occurs most vigorously when the bristles 21 straighten up after the curvature stress which they have undergone against the driving roller 3, which is rotated. in the same direction as that of the brush roller 5, which has the effect and consequence that the brush bristles 21 have a reverse relative movement with respect to the surface of the driving roller 3; the waste will therefore be propelled at 24, in the direction of the arrow.
Reference will then be made to FIG. 5, which schematically represents, in a variant embodiment of the machine according to the invention, the position of the various mechanical parts which make up the drive drum assembly 3 of the piece of meat being treatment, after modification of the position of the various mechanical members, with the sectional view of the knife holder 1 and the knife 2. The respective positions of the components 3, 8, 28 and 1 will be noted; indeed it can be seen that the knife holder 1 is, in this case, not articulated on the lever 14 but is integral therewith. We will then observe that the
axes of rotation 26 and 8 are on the same horizontal plane and at a distance such as the arc of a circle 33, described by the angular displacement of the levers 14 and 15, of the knife holder 2 and of the blade 28 of the knife 2, passes through the center of rotation 26 of the driving roller 3; the center distance 26 and 8 is therefore a function of the diameter of the driving roller 3. Thus the pressure forces applied to the faces 31 and 32 of the knife holder 1, by the treated meats, balance in all angular positions, from the minimum at the maximum of stroke 33.
Reference will then be made to FIG. 6 which lets observe that, when the angle 33 is increased (by the action of angular displacement of the levers 14 and 15) which passes through the center of rotation 26 of the driving drum 3 and the cutting edge 28 of the knife 2, the cylindrical surface 32 of the knife holder 1 is parallel to that of the driving roller 3, which has the effect
a good balanced distribution of the forces exerted
in the direction of the arrows a and b on the opposite surfaces 31 and
32 of the knife holder 1, during the cutting work. The knife holder 1 and the knife 2 are then in the best cutting position without exaggerated efforts and this in all the intermediate positions between the minimum and the maximum of the angular displacement of the knife holder 1 and its knife 2. This arrangement of the mechanical organs of the machine for skinning the pieces of meat has also made it possible to considerably lower the power of the driving driving force of the assembly, therefore of the cost price and of the weight of the latter.
The devices resulting from the improvements described in this patent will provide greater speed of execution in butchery, delicatessen,
etc, as well as an easier sanitary cleaning of the organs of the machines for skinning pieces of meat and for scaling fish.
It should be understood that the present invention is in no way limited to the embodiment described above and that many modifications can be made thereto without departing from the scope of this patent.
CLAIMS
1. Machine for skinning pieces of meat by separating them from aponeuroses, rinds and other waste, characterized in that it comprises a suspension device allowing the knife to automatically take the appropriate cutting angle, on the one hand, and a device for permanent and dry cleaning of a drive roller for the pieces of meat during the entire operating time of the machine, on the other hand.
