Abstract

La présente invention concerne un procédé qui permet de mesurer le pourcentage de gras de la viande en plaçant une quantité fixe de viande dans un liquide qui ne dissout pas le gras et en mesurant la densité ou le volume spécifique de la viande. La présente invention concerne également un dispositif de mesure qui permet de déterminer le pourcentage de gras par un point de mesure qui est obtenu avec un échantillon connu, et qui comporte des moyens flacon 1, piston 3, tige graduée 4 avec lesquels la densité ou le volume spécifique de la viande peuvent être mesurés.
