Abstract

Procédé de restauration des aptitudes fromagères de laits traités thermiquement et nouveaux produits ainsi obtenus. Dans ce procédé, on rend aux laits traités thermiquement leurs aptitudes fromagères en y ajoutant, avant ou après le traitement thermique, une petite quantité de rétentat d'ultrafiltration, ce rétentat étant à l'état frais, à l'état sec ou après reconstitution dans l'eau ; la quantité de rétentat ajoutée au lait est fonction de l'augmentation désirée de la teneur en protéines du lait, cette augmentation étant comprise entre environ 0 et 40 %. La présente invention est particulièrement utile pour permettre d'utiliser en fromagerie des laits traités thermiquement, par exemple, par pasteurisation, stérilisation ou transformation en poudre, en obtenant des fromages présentant les mêmes caractéristiques que les produits obtenus en fromagerie traditionnelle.
