Abstract

A protein-rich milk extract is prepared by (a) concentrating by ultrafiltration the lactoserum obtd. by drainage of the curds from soft cheese mfr., at 4-15 degrees C, at a rate of increase of concn. of 3.5-5 by vol. to obtain a milk contg. 9-9.5% dry matter, of which 3.2-3.5% is nitrogenous; (b) incorporating 2.8-3.5% of butyric fatty matter; and (c) homogenising the prod. The extract is used in cheese mfr. and contains proteins not densturised by heat., and the necessary fatty matter. A separate standardisation step is obviated.
