Abstract

Protein recovery from whey comprises (a) heat-treatment of skim or raw whey to cause protein denaturing, and then (b) sepn. of the denatured proteins from the other non-fatty whey components by ultra-filtration. The proteins can be used in prods. for children's nutrition and diets and in cheese mfr. Centrifuging is obviated. Residual caseins and fats can be recovered directly. Microbe population of prod. can be reduced and lysine is protected. Denaturing increases permeation yields in ultrafiltration by 70-300% at same temp. Residual lactose and salt contents are low.
