Abstract
Cette invention est relative à un procédé et un appareil pour la production d'un concentré de saveur et d'arôme à partir de substrats porteurs d'arôme et de saveur, notamment de café grillé et broyé. Plus particulièrement, l'invention se rapporte à un procédé pour désarômatiser et désorber les constituants de l'arome et de la saveur à partir desdits substrats en faisant passer de la vapeur humide à contre-courant à travers une couche continue en forme de colonne desdits substrats; cette couche s'écoulant vers le haut à travers une colonne de désorption étanche au vide et pratiquement verticale. La vapeur humide est appliquée en une quantité et d'une manière telles qu'on forme et maintient, dans ladite couche en forme de colonne et en cours d'écoulement, une zone de désorption pratiquement stationnaire à une distance finie au-dessus de l'entrée inférieure de ladite colonne de désorption verticale. La zone de désorption stationnaire est formée par la condensation de la vapeur umide quand elle passe, dans ladite couche en forme de colonne et en cours d'écoulement, dans un gradient de température progressivement décroissante. Le gradient de température est créé par l'introduction continue de substrat frais refroidi par l'entrée située à la base. Une fraction d'arôme et de saveur à l'état de vapeur et une fraction de solides solubles désorbée sont collectées dans des pièges froids à vide communiquant avec ladite colonne à peu près à l'endroit de ladite zone stationnaire de désorption.
