Abstract

Procédé pour préparer un composé organique volatil, de préférence l'éthanol, par fermentation continue d'un substrat contenant des hydrates de carbone dans un fermenteur. On sépare un courant de la liqueur de fermentation par la force centrifuge en au moins un courant concentré en levure et un courant exempt de levure, on recycle le courant concentré en levure sur le fermenteur et on sépare le courant débarrassé de levure en un courant enrichi en composé organique volatil qu'on évacue et un courant résiduel dont une partie au moins est recyclée sur le fermenteur. Le procédé selon l'invention permet d'obtenir un produit concentré en composé organique recherché.
