Abstract

L'invention concerne une viande synthétique analogue à du bacon. Elle se rapporte à un bacon synthétique contenant des couches alternées de parties maigres, de type connu, et de parties grasses. Celles-ci contiennent 3 à 7 % d'albumine, 25 à 40% d'eau, 0 à 10 % de protéines végétales, 52 à 60 % d'huiles végétales, 0,05 à 0,60 % de gommes végétales et 4 à 10 % d'aromates et d'agents d'assaisonnement, par rapport au poids total de la couche. Application à la fabrication de bacon synthétique ayant toutes les propriétés du bacon naturel.
