Abstract

Le produit comprend une enveloppe de pâte et un remplissage mou. La pâte sans levain cuite au four dont l'humidité ne dépasse pas 1 % en poids, a une structure grossière et une surface extérieure imperméable. L'adjuvant de formation de structure alvéolaire est du blanc d'oeuf. Le diamètre extérieur de l'enveloppe est de 10 à 20 mm et le rapport de poids entre remplissage injecté et l'enveloppe est d'au moins 2 : 1, le produit étant capable de flotter dans les liquides. Applicable aux produits alimentaires sous emballage.
