Abstract

L'invention concerne un dispositif de fermentation aérobie dans une cuve de fermentation, comportant des moyens de contrôle et de réglage de la teneur en oxygène dans cette cuve, ainsi qu'un conduit d'évacuation des gaz résiduaires et des conduits d'admission d'air et d'oxygène cependant qu'au moins une sonde d'oxygène est disposée dans la cuve. Ce dispositif est caractérisé en ce qu'il comporte une sonde d'oxygène supplémentaire disposée dans le conduit d'évacuation et associée à un commutateur de valeur de seuil. Application dans le domaine de la fabrication de vinaigre à partir de l'alcool éthylique par fermentation aérobie.
