Abstract

Pâte d'amandes et noisettes additionnées de soja. On ajoute à des amandes et/ou noisettes broyées finement du soja en poudre (mais pas farine), semoule, granules ou même grains entiers, auquel on a fait absorber de l'eau pendant plusieurs heures (jusqu'à saturation) à environ 20 degrés C. On obtient ainsi une pâte pauvre en calories. Le soja peut avoir été préalablement dégraissé. Application à la fabrication de tous articles de pâtisserie et confiserie, notamment massepain, biscuits, croissants, etc.
