Abstract

L'invention concerne la fabrication de fromages. Le procédé de l'invention consiste à traiter du lait ou du caillé de façon à obtenir un caillé consistant de pH prédéterminé de l'ordre de 4,8-5,1, ce traitement comportant une séparation du sérum résultant dudit traitement, puis à égoutter ce caillé consistant en une durée suffisamment courte pour obtenir un pH final contrôlé et une pâte fromagère d'une bonne intégrité physique. Cet égouttage est par exemple réalisé en quelques minutes par compression progressive du caillé, entre les bandes en tissu absorbant 17 et 18.
