Abstract
Procédé de fabrication d'une suspension aqueuse de soja, dans lequel on broye des fèves de soja en présence d'eau et l'on en détruit le facteur antitrypsique par voie thermique. On broye les fèves en présence d'eau à une température de 90 à 100 degrés C jusqu'à obtention d'une dispersion de particules dont la plupart présentent des dimensions de l'ordre de 100 à 500 mu , on chauffe la dispersion par injection de vapeur à une température de 120 à 160 degrés C et l'on broye la dispersion dans un moulin à billes jusqu'à obtention d'une suspension comprenant des corpuscules de protéine et de graisse de dimensions de l'ordre de 2 à 10 mu et des débris de parois cellulaires dont les dimensions n'excèdent pas environ 40 à 100 mu .
