Abstract

Procédé de conditionnement de produits alimentaires. Plus particulièrement l'invention concerne un procédé dans lequel on cuit les produits dans un emballage formé d'une feuille imperméable flexible qui constitue une barrière aseptique et qui est équipée d'évents permettant de relâcher la pression aux parois de l'emballage, procédé caractérisé par le fait que les évents sont assez petits pour limiter l'infection lors du refroidissement tout en ayant un passage libre moyen plus grand que leur longueur et qu'aprés le refroidissement, on bouche les évents et on chauffe l'emballage bouché pour en pasteuriser le contenu. Application à l'industrie alimentaire.
