Abstract

1,271,892. Preserving bakery products. P. R. G. YOUNG. 3 Dec., 1970 [11 May, 1970], No. 22702/70. Heading A2D. A method of making bread comprises mixing, proving and baking dough to which has been added shortening and emulsifying agents of high purity, the bread having been baked, then being sealed in a container and processed by being heated at a temperature greater than 121.1‹C for 20 minutes to make it sterile. The baking step may take place in the container, after which the container is sealed prior to sterilisation. A further method of bread making comprises mixing the high purity shortening and emulsifying agents with dough, proving the dough, placing the dough in a can, baking the dough in the can and sealing the can. The sealed-in bread may be sterilised by heat treatment.
