Abstract

A steam baking oven for bread, pastry and fancies has a closed circuit of tubes in which the steam transfers the heat from the furnace to the decks. The upper loops of the heating tubes which are heated by a burner lead to the decks; they are shielded from the lower loops by a partition. The lower loops are swept and preheated by the flue gases before they are discharged in the chimney. The hot loop are thus shielded from colder flue gases and the thermal efficiency is improved.
