Abstract

PURPOSE:To make a simple structure and improve an efficiency of combustion by a method wherein a gas burner is arranged below a hot heating plate installed in a double staged gas oven for use in baking a pizza and the like. CONSTITUTION:Pizzas are placed on the upper and lower hot heating plates 1 and 2 and then a burners 3 and 4 are ignited. In this case, the hot heating plate 2 is constructed such that a hot heating plate 4a, buffle plate 5 and guide plate 6 are arranged over the gas burner 4 so as to guide the heat of the burner efficiently up to the leading end 2a of the hot heating plate 2. Waste heat from the burner 3 is flowed below the hot heating plate 2 to heat the same, further flowed over the hot heating plate 2 and then discharged out of the oven. With the arrangement as described above, since a thermal conducting heat of the combustion gas and convection heat as well as a radiation heat may simultaneously be applied to the pizzas A, it is possible to improve a thermal efficiency.
