Abstract
PURPOSE: To improve the cooking efficiency of the captioned cooking range using a gaseous fuel such as a city gas by a method wherein an oxidized catalyst carried by a heat resistant inorganic substance is arranged in the center of the cooking range in such a manner that the catalyst is held between upper and lower heat resistant and infrared ray transmissive plates being spaced apart.
CONSTITUTION: When the catalyst 3 set in a burner 4 is ignited, it burns with flames generating at the outlets of small holes 2 until the catalyst is heated to a reaction temperature but when the reaction temperature is reached, the flames are extinguished and catalyst combustion takes place. In this case, the catalyst 3 is controlled to a suitable temperature, e.g., 700 to 1,100°C with the air/fuel ratio being in the order of 1.05 to 2.5. With the above structure, the infrared rays generating from both surfaces of the catalyst 3 are radiated through the infrared ray transmissive plates 5. Accordingly, the consumption of the fuel is reduced and a foodstaff is cooked speedily and uniformly throughout to thereby improve the cooking efficiency of the cooking range.
