Abstract

PURPOSE: To improve the cooking efficiency of the cooking range by a method wherein a gaseous fuel such as a city gas is burned on the surface of an oxidized catalyst carried by a heat resistant inorganic substance.
CONSTITUTION: When burners 4 and 4' are ignited, the fuel gas is burned with flames generating as the outltes of small holes 2 until the catalysts 3 and 3' are heated to a reaction temperature but when they are heated to the reaction temperature, the above flame combustion shifts to catalytic combustion so that the flames are extinguished. In this case, the catalysts are controlled to a predetermined temperature, e.g., 700 to 1,100°C with the air/fuel ratio being in the order of 1.05 to 2.5. With the above arrangement, the cooking is performed by the radiation of infrared rays so that the consumption of fuel is reduced and the cooking of a foodstaff is made speedily and uniformly throughout the foodstaff to thereby improve the cooking efficiency of the cooking range.
