Abstract

Bread making oven is designed to provide the draught in the chimney necessary to obtain complete combustion on the hearth and a circulation of the hot gases suitable for effecting a good distribution of the heat along the flues and inside the superimposed baking chambers. The hearth is formed from a hollow cylinder of heat-resisting. Steam tubes alternate along the longidutinal axis of the hearth and surround the baking chambers. These tubes are heated by radiation from the hearth or by convection from the hot gases circulating in the channels, and transport heat from the hearth to the baking chambers.
