Abstract
La présente invention concerne des produits alimentaires en conserve et en particulier des produits microbiologiquement stables contenant des solides protéinés comestibles en milieu aqueux. Le produit alimentaire protéiné selon l'invention, ayant une teneur en humidité supérieure à 50 % en poids et protégé contre la détérioration due aux microbes par un pH inférieur ou égal à 4,5, est caractérisé en ce que sa stabilite microbiologique à long terme est augmentée par la présence de bactéries productrices d'acide homofermentatives viables et de glucides fermentables disponibles. Application à l'industrie alimentaire.
