Abstract

Crisp, potato-based foods of potato-chips type, are prepd. by (1) mixing 33 1/3-80% ground dehydrated potato powder and 20-662/3% binder, e.g., pre-gelatinised starch, ground cereal flour or rotary-dried potato pancake mash, with water, to form a dough contg. >=35(35-45)wt.% moisture; (2) rolling out dough to a thin layer and dividing it into individual pieces; (3) air-drying, esp. at 71-77 degrees C, until a dry skin is formed and moisture content of pieces is 32-25%; (4) holding pieces 2-20 mins. in a sealed zone under conditions which prevent further drying and allow formation of a moisture conent equilibrium between centre and surface of pieces and (5) frying pieces in a bath of fat, esp. at 150-200 degrees C.
