Abstract

Unbaked dough, esp. loaves, are charged onto a belt which conveys them through a baking tunnel; from a proving tray comprising parallel endless fabric bands, linked by a cross bar, which may be slid over tubes at each end. The tray is loaded onto a trolley, which is introduced into the oven above the belt, and withdrawn at a rate 1-2 cms/sec; pawl arms engage the cross bar, and diplace the hands, thus charging loaves onto the belt; the pawls being disengaged by castors on the trolley, at end of traverse. loaves are continuously supported, thus avoiding distortion.
