Abstract
Increased yields of sugar crystals are obtained at a lower cost than by conventional methods by a process comprising pre-concentrating a sugar soln. to about 75% solids; then rapidly evaporating the soln. (in 20-50 sec.) to the desired solids content under a pressure of 3 atm. g.; mixing the concentrated syrup with the recycled syrup to a supersaturation concn. permitting a controlled crystallisation at 80-100 degrees C.; subjecting the mixture to a continuous crystallisation by cooling; separating and recycling the syrup; and concentrating the crystalline mass to the desired concn. of crystals. During the mixing, the syrup is inoculated with crystal nuclei.
