Abstract

PURPOSE: To prepare high purity crystalline maltose, easily, in an industrial scale, in high yield, by the combination of the saccharification of starch and the crystal separation from massecuite under specific conditions.
CONSTITUTION: Starch is converted directly to a sugar syrup containing ≥93.0% of maltose (reduced to anhydride) by an enzymatic saccharification process. After concentrating the syrup to a definite concentration, the temperature of the massecuite thus obtained is lowered from 50W40°C to 30W27°C while keeping the degree of supersaturation to a nearly constant value (±0.03) between 1.15W1.30. The precipitated and grown crystals are separated from the liquid to obtain crystalline maltose of a purity of ≥97%. The crude maltose thus obtained is dissolved in water, and recrystallized under the above conditions to obtain pure crystalline maltose having a purity of ≥99%.
