Abstract
Crystalline maltose in good yields is obtained by subjecting a starch hydrolyzate having a maltose content of at least 75% and a viscosity of greater than 400 cps. to the action of glucoamylase, whereby the viscosity is reduced to below 400 cps. without any substantial reduction in the maltose content, and then subjecting the resulting hydrolyzate to a conventional crystallization operation. Crystallization is brought about by bringing the enzyme treated hydrolyzate to a state of supersaturation with respect to maltose by increasing the temperature and solids content, and inducing the start of crystallization in the super- saturated solution. The temperature is then lowered until at least 25% of the maltose has crystallized. Maltose crystals of a size of at least 120 microns x 50 microns are recovered from the massecuite.
