Description

Procédé et récipient pour la fabrication du levain.
Dans les grosses boulangeries, le levain nécessaire pour la cuisson du pain est préparé actuellement de manière discontinue dans divers récipients. Les différentes charges de levain sont ensuite amenées successivement à un pétrin mécanique qui fonctionne, de préférence de manière continue. Il peut alors se produire, entre les charges de levain qui sont amenées l'une après l'autre au pétrissage, des différences de température et de consistance qui ne peuvent être compensées que difficilement, voire pas du tout, au cours de l'opération de pétrissage qui fait suite. Ces différences ont naturellement une influence défavorable sur les produits finis de boulangerie.
Conformément à l'invention, cet inconvénient est pallié par le fait que le levain fraîchement préparé est amené par le bas, de manière continue ou discontinue, à un grand récipient et le levain qui est entré en fermentation et, de ce fait, a un poids spécifique, inférieur, est enlevé de manière continue ou discontinue à la surface du contenu du récipient. De cette manière, on assure au levain fini une température et une consistance uniforme.
Pendant le processus de fermentation dans le grand récipient, il n'y a aucun mouvement mécanique de la pâte; au contraire, les éléments constitutifs du levain montent absolument d'eux-mêmes au cours de la fermentation. Il en résulte que les substances aromatiques restent dans le levain, ce qui n'est pas le cas lorsque le levain est remué pendant la fermentation.
La figure unique du dessin représente un grand récipient destiné à la mise en oeuvre du procédé conforme à l'invention, vu schématiquement en coupe verticale. Ce récipient a une enveloppe cylindrique a et un fond en forme d'entonnoir b au centre duquel est raccordé une conduite c, avec une pompe de refoulement d.
A une certaine distance du fond b est posée, sur plusieurs entretoises f disposées sur champ, une plaque ronde horizontale g dont le diamètre est plus petit que celui de l'enveloppe cylindrique du récipient et dont le but est d'empêcher le levain frais refoulé par la pompe d à travers la conduite c de monter immédiatement vers le milieu du récipient par suite de la vitesse de refoulement, et de l'obliger à dévier vers la paroi du récipient.
Sur le centre de la plaque g est fixé un tube vertical h qui s'étend jusqu'au bord supérieur du récipient et est maintenu à son extrémité supérieure par des tirants i. Le tube h sert au guidage d'une traverse j qui est suspendue à un câble m passé autour de poulies de renvoi k. Sur la traverse j est fixée l'extrémité supérieure d'un tuyau souple n, dont l'autre extrémité est raccordée à une conduite o traversant l'enveloppe a du récipient immédiatement au-dessus du fond b. Lorsque le récipient doit être vidé complètement, le reste du contenu est aspiré par la conduite c raccordée au fond b du récipient, conduite qui est raccordée, dans ce but, par l'intermédiaire d'un robinet, à la pompe d'aspiration.

In this way, the finished leaven is guaranteed a uniform temperature and consistency.
During the fermentation process in the large container, there is no mechanical movement of the dough; on the contrary, the constituent elements of the leaven rise absolutely by themselves during fermentation. As a result, the aromatic substances remain in the leaven, which is not the case when the leaven is stirred during fermentation.
