Abstract
Föreliggande uppfinning avser en livsmedelsfettkomponent som är kapabel att förhindra oxidation av fettsyror och är särskilt fördelaktig för hälsan. I synnerhet är föreliggande uppfinning lämpad för att öka koncentrationen av fiber och hälsosamt beta-glukan i produkter samt för att producera en önskad fettprofil i produkterna och förhindra oxidation av omättade fettsyror under bearbetningen och förvaringen av produkterna. Således är livsmedelsfettkomponenten lämpad för att allmänt användas vid framställning av livsmedelsprodukter, och således förbättra deras hälsoegenskaper och organoleptiska egenskaper. Som praktiska exempel från livsmedelsindustrin kan nämnas bland annat följande tillämpningar: bageriprodukter och andra spannmålsprodukter, köttprodukter, mejeriprodukter, olika färdigmatprodukter, mellanmåls- och frukostprodukter.
