CONSISTE EN SOMETER A REACCION DE TRANSPOSICION UNA GRASA CONSTITUIDA POR GLICERIDOS DE ACIDOS GRASOS C<1<6-C<1<8 SATURADOS O INSATURADOS, POR CONTACTO CON UN ENZIMA COMO CATALIZADOR QUE ES SELECTIVAMENTE ACTIVO EN LAS POSICIONES 1 Y 3 SOLAMENTE; LA GRASA TRANSPUESTA, SE FRACCIONA PARA RECUPERAR UNA FRACCION QUE COMPRENDE LOS GLICERIDOS DISATURADOS SIMETRICOS. LA RELACION MOLAR GUG GGU EN LAS GRASAS SOMETIDAS A INTERESTERIFICACION ES DE 1:2 COMO MINIMO. EL CATALIZADOR ESTA CONSTITUIDO POR UN ENZIMA LIPASA TAL COMO UN ENZIMA DE ASPERGILLUS O RHIZOPUS; DICHO ENZIMA SE ENCUENTRA SOBRE UN SOPORTE INERTE.
