Abstract
Procedimiento para la obtención de un producto de carne deshidratado comestible, caracterizado porque comprende mezclar íntimamente de 40 a 90 por ciento en peso de piezas de carne cruda con 10 a 60 por ciento en peso de materiales vegetales o productos de carne secos o semi-secos para formar una mezcla cohesiva firme, agregar a la formulación durante el mezclado una o mas sustancia para reducir o controlar la actividad de agua en el producto final, conformar dicha mezcla en forma de una lámina o un extruido para producir un producto de carne deshidratado que tiene un nivel de actividad de agua comprendido entre 0,7 y 0,9
