Abstract

Mejoras introducidas en los procedimientos de obtención de caramelos, gasificados, que partiendo de la utilización de una masa azucarada en estado fundente que es sometida a presión superior a la atmósfera , manteniéndola en agitación , al mismo tiempo que se suministra a tal masa azucarada un gas atóxico, capaz de mezclarse o dispersarse formando burbujas en el seno de la masa azucarada, siendo todo ello en si conocido, esencialmente se caracteriza, porque consisten en suministrar el gas a través de una placa porosa situada en el fondo del reactor en el que está situada la masa azucarada en estado fundente y sometida a agitación realizándose la aportación del gas por la zona inferior del agitador y del reactor, en la que está situada la placa porosa y la entrada de gas se realiza a la menor velocidad posible, manteniéndose la agitación que provoca la fractura y dispersión de las burbujas de gas dentro del seno de la masa azucarada.
