Abstract

Procedimiento para la obtención de proteínas alimenticias, caracterizado porque consisten en cultivar, a una temperatura inferior a 280ºC, el hongo Trichoderma Album sobre medios nutritivos líquidos, siendo mantenido el pH de dichos medios en un valor comprendido entre aproximadamente 3,7 y 4,8 siendo de aproximadamente 6 a 10 miligramos/litro el contenido de oxígeno disuelto, realizándose dicho cultivo con una agitación eficaz no traumatizante y en condiciones tales que el esponjamiento o aumento de volumen sea prácticamente nulo.
