Abstract
A method for the production of beer wort from an aqueous porridge of vegetable matter containing starch and protein (for example, barley), in which the starch is liquefied by treating the porridge with a starch liquefaction enzyme (eg, commercial bacterial α-amylase) and proteins are converted to soluble nitrogen-containing compounds with a proteolytic enzyme, characterized by treatment at a temperature above about 55ºC (preferably between 60ºC and 75ºC) with a thermally stable commercial proteolytic enzyme.
