Abstract

1345413 Wort A B M INDUSTRIAL PRODUCTS Ltd 22 Feb 1972 [4 March 1971] 6042/71 Heading C6E Wort is produced by treatment of a slurry of a starch and protein containing plant material with a starch liquefying enzyme and a proteolytic enzyme derived from Bacillus thermoproteolyticus Rokko. The plant material may be a cereal, and the starch liquefying enzyme may be a commercial bacterial α-amylase or malt. The enzymes may be added simultaneously or successively the proteolytic enzyme being added last and preferably at 755‹C. For simultaneous treatment the pH is preferably 6À5-8À5. The resulting solution may be treated with a saccharifying enzyme, preferably at 55-60‹C and pH 4À5-6.
