Abstract

1409002 Enzymatic hydrolysis of fish protein MORINAGA MILK INDUSTRY CO Ltd 3 April 1973 [11 Dec 1972] 15958/73 Heading C3H Fish protein is at least 80% hydrolysed with a protease selected from pancreatin and enzymes derived from Aspergillus, Bacillus, Streptomyces and Rizopus which are active at about pH 7 and at 35-55‹ C., then the hydrolysate is heated to deactivate the enzyme and for pasteurization, filtered, defatted and dried, the product being used in a concentration of at least 0À5% w/v. of the total medium, to replace animal organ infusion and peptone in BHI or HIB nutrient media. The fish protein may be of fish meat. Substitute media for BHI and HIB, designated FLP1 and FLP2, are described.
