Abstract

Wort obtained from a mash made from lager malt by infusion is treated with a proteolytic enzyme, e.g. papain or pepsin or a chill-proofing compound obtained therefrom, together with a reducing agent, e.g. potassium metabisulphite, ascorbic acid or analogue of these, e.g. for 1/2 to 2 hours at from 120 DEG F. to 130 DEG F., preferably for 1 hour at 125 DEG F. Suitable amounts of enzyme and metabisulphite are, respectively, 5 lbs. and 3 lbs. per every 100 barrels of wort. The treated wort may be boiled and fermented to produce a malt beverage.
