Abstract

Un procedimiento de fabricación de un producto a base de leche ácida, caracterizado porque la porción grasa de una materia prima láctea es modificada físicamente por una homogeneización a alta presión a una presión de 250- 1.000 bar y/o microfiltración y porque la materia prima láctea que contiene glóbulos de grasa modificados físicamente se trata con una enzima de reticulación y se acidifica.
