Abstract

Producción de sales de 2-fosfato de ascorbilo que se utilizan como aditivos alimentarios para animales o como antioxidantes en cosméticos. Producción de sales de 2-fosfato de ascorbilo de sodio, potasio, magnesio o aluminio (I) *fórmula * que comprende: (a) disolver L- ascorbil-2-fosfato de calcio (Ia) *fórmula * en una disolución acuosa de un 2-fosfato de ascorbilo (II) a pH 0,5-4, (b) eliminar los iones calcio de la disolución, (c) ajustar la disolución pH 7-11 con una sal de sodio, potasio, magnesio o aluminio y (d) aislar el producto. Producción de sales de 2-fosfato de ascorbilo de sodio, potasio, magnesio o aluminio de fórmula (I) que comprende: (a) disolver L- ascorbil-2-fosfato de calcio (Ia) *fórmula * en una disolución acuosa de un 2-fosfato de ascorbilo (II) a pH 0,5-4, (b) eliminar los iones calcio de la disolución, (c) ajustar la disolución pH 7-11 con una sal de sodio, potasio, magnesio o aluminio y (d) aislar el producto. M = Na, K, Mg o Al; P = un grupo de fórmula (i)-(iii);k veces; m = 3-5; y P{sup,1} = H{sub,2}PO{sub,3}, H{sub,3}P{sub,2}O{sub,6} o H{sub,3}P{sub,3}O{sub,9}.
