Abstract
Se prepara polidextrosa de calidad superior y sabor limpio haciendo reaccionar glucosa o materiales que contienen glucosa como almidón hidrolizado con un poliol como sorbitol en presencia de niveles bajos de un ácido policarboxílico como ácido cítrico. En una realización, se prepara la polidextrosa haciendo reaccionar glucosa o materiales que contienen glucosa como almidón hidrolizado con un poliol como sorbitol en presencia de niveles bajo, esto es, entre aproximadamente 0,03% y aproximadamente 0,1% de ácido cítrico a una temperatura entre aproximadamente 145 y aproximadamente 185ºC, preferiblemente entre aproximadamente 150 y aproximadamente 160ºC. Debido a los bajos niveles de catalizador utilizados en las realizaciones preferidas, se forman sabores anormales mínimamente, o no lo hacen en absoluto y poca coloración durante el curso de la reacción, pero el producto puede purificarse utilizando intercambio iónico, filtración por membranas o tratamiento con carbón, o bien puede modificarse más aún por hidrogenación, si así se desea para ciertas aplicaciones.
