Abstract
La presente invencion se refiere a una polidextrosa grado alimenticio de sabor limpio y de calidad superior al hacer reaccionar glucosa o materiales que contienen glucosa, tales como almidon hidrolizado, con un poliol tal como puede ser sorbitol, en presencia de bajos niveles de acido policarboxilico, tal como acido citrico. En una modalidad, se prepara la polidextrosa al hacer reaccionar glucosa o materiales que contienen glucosa, tales como almidon hidrolizado, con un poliol, tal como puede ser sorbitol, en presencia de bajos niveles, es decir, desde aproximadamente 0.03% a aproximadamente 0.1%, de acido citrico a una temperatura de desde aproximadamente 145 a aproximadamente 185°C, de preferencia, desde aproximadamente 150°C a aproximadamente 160°C. Debido a los bajos niveles de catalizador utilizados en las modalidades preferidas, durante el transcurso de la reaccion se forma una cantidad minima o nula de sabores inadecuados y un color de tono bajo aunque, el producto puede purificarse utilizando intercambio ionico, filtracion en membrana o tratamiento con carbon o modificarse adicionalmente mediante hidrogenacion si se desea, para ciertas aplicaciones.
