Abstract
Utilización de anticuerpos contra la lipoxigenasa (E.C. 1.13.11.12.) en alimentos o en su ingredientes. La lipoxigenasa es responsable de la iniciación de procesos de peroxidación de lípidos. Los anticuerpos contra la lipoxigenasa permiten la inhibición de este enzima o su eliminación selectiva por técnicas separativas de aplicación en la industria alimentaria. La utilización de anticuerpos contra la lipoxigenasa en la elaboración de sobrasada produce una inactivación del enzima perceptible incluso después del curado de este embutido, observándose efectos sinergísticos con otros antioxidantes.
