Abstract

Use of antibodies against lypoxygenase (E.C. 1.13.11.12) in foodstuffs or in their ingredients. Lipoxygenase is responsible for initiating the processes of the peroxidation of lipids. Antibodies against lipoxygenase make it possible to inhibit this enzyme or eliminate it selectively by separative techniques which have application in the food industry. The use of antibodies against lipoxygenase in the preparation of Majorcan sausage produces inactivation of the perceptible enzyme which is included after the curing of this sausage, producing effects which are synergistic with other antioxidants.
