Description

The present invention relates to the technical field of food preparation equipment used in particular to ensure the preparation of flour dough such as for example, but not exclusively, bread dough, pie dough or pastries.

In the above field, it is known to implement a food preparation apparatus, also called planetary type food processor or mixer, comprising a foot frame which supports a tank or a mixing container, inside. which ingredients to mix will be arranged. The apparatus also comprises a head frame further comprising a pivoting arm whose free end, intended to be placed above the tank, comprises means for holding and driving in rotation of at least one mixing tool interchangeable, the latter may be a hook for pasta, a palette for creams or a whip for liquids. In the case of the preparation of thick viscoelastic pastes such as bread dough, the mixing tool generally used is a kind of L-shaped arm, often called a hook, to ensure kneading of the dough. However, this type of tool does not always make it possible to obtain a bread dough of satisfactory quality. This lack of quality seems to be able to be accounted for the kneading performed by the L tool, a good kneading being complex.

In order to improve kneading performance, a patent application FR 2 710 551 a proposed mixing the ingredients and kneading the dough using two mixing tools. A first tool is stationary with respect to the mixing container and has an L shape. The second tool is rotatable relative to the mixing container and has a G shape. The two mixing tools are further adapted so that during the rotation of the tool in G the horizontal branch of the tool in L passes through the loop of G.

Still with the aim of improving kneading performance, a US patent US 5,556,201 to proposed to implement two tools of forms and movements different from those of the aforementioned French application. Thus, a first mixing tool is in the form of a flat perforated spatula, also called pallet or sheet, extending in a vertical plane and has, inside the tank, a planetary type movement resulting from the rotation of the first tool on itself about a vertical secondary vertical axis of rotation combined with a rotation of the secondary axis about an axis vertical rotation principal confused with the central axis of the tank. The second tool is made in the form of a scraper bar, called scraper, rotating synchronously to the first tool around the main rotation axis being located in the immediate vicinity of the wall of the tank so as to take off the dough in the process of kneading. Such a scraper has the particular advantage of avoiding crusting sticky substances to the wall when the device is provided with heating means of the tank.
Other food preparation devices are described in the documents US Patent 4946285 and DE 906921 .

However, the inventor has found that devices with two tools such as those mentioned above did not always make it possible to obtain a good kneading of the dough. The inventor then had the merit of highlighting that this lack of kneading could in particular be taken into account the shape and relative movement of the tools. The inventor then began extensive research and testing to obtain a dough preparation apparatus and tools offering kneading quality better than the devices and tools known to date, especially in the field planetary robots.

  • l'appareil comporte également un deuxième outil de travail, dit contre-outil, fixé sur un plateau entrainé en rotation autour d'un axe P, le contre-outil possédant une branche de travail présentant une partie active venant au contact des ingrédients à malaxer, la partie active de la branche de travail venant à proximité de la trajectoire parcourue par la partie active du premier outil de travail de manière à ce que le contre-outil et le premier outil de travail interagissent sur les ingrédients à malaxer dans la cuve ;
In order to achieve these objectives, the invention relates to a food preparation apparatus, in particular for the preparation of pasta made from flour, comprising a frame supporting:
  • a mixing vessel, said vessel, comprising an opening through which ingredients can be introduced,
  • a first working tool comprising a head connected to means for rotating the head on itself about an axis S, the first working tool comprising a working branch comprising an active part coming into contact with the ingredients to knead,
characterized in that
  • the apparatus also comprises a second working tool, said counter-tool, fixed on a plate driven in rotation about an axis P, the counter-tool having a working branch having an active part coming into contact with the ingredients to be kneaded the active part of the working limb coming close to the path traversed by the active part of the first working tool so that the counter-tool and the first working tool interact on the ingredients to be kneaded in the tank;
  • and in that the first working tool is rotated about the axis P.

During the implementation of the food preparation apparatus and its tools according to the invention, it has been found that, in the case of the preparation of dough, for the same quantity and quality of ingredients the invention surprisingly allowed to obtain a paste better mixed and kneaded than the paste obtained by means of a single mixing tool generally in the form of L.

One possible explanation for this best result is the cooperation of the first working tool and the counter-tool working in synergy with reduced sets of passage between them so that their joint actions at slow speed, during mixing and kneading, allow to successively stretch, fold the dough, roll and create flow with ventilation, while respecting the fibers of viscoelastic pasta extremely fragile.

According to a feature of the invention to improve this cooperation and kneading, the counter-tool has a lower portion having a shape matching the shape of the path swept by the lower part of the first work tool and ending advantageously with a tip may deviate from the path of the first work tool. Such a tip at the end of the counter-tool has the advantage of piercing the fabric of the dough during kneading to direct and facilitate the flow of the flow of the dough.

In the same sense, according to another characteristic of the invention, the axes of rotation S and P are parallel.

According to yet another characteristic of the invention, the location and the shape of the first working tool and the counter-tool are adapted so that the counter-tool is located at the periphery of the first working tool during the rotation of this tool. latest.

According to another characteristic of the invention also aimed at improving this cooperation and the combined work of the tools, the apparatus is adapted so that the first working tool passes regularly close to the counter-tool so as to induce in particular a rolling effect. , stretching and shearing, in the case of dough preparation, with aeration, favorable to the creation of harmonious flows. In this spirit, during the movement of the tools, the minimum horizontal distance between the first working tool and the counter-tool may be less than 10 mm and preferably between 2 to 6 mm.

In the same spirit, according to a feature of the invention, in the mixing position and when the concave inner surface of the working arm of the counter-tool is opposite the convex outer surface of the working arm of the first working tool , the horizontal distance separating these two surfaces is between 1 mm and 10 mm and preferably between 2 and 6 mm.

According to yet another feature of the invention for optimizing the combined work, on the one hand, the counter-tool and the first working tool and, on the other hand, the counter-tool, the first tool and work tool. the inner wall of the tank, the food preparation apparatus according to the invention can be made so that during the movement of the tools:
  • the minimum horizontal distance between the first working tool and the inner wall of the tank is less than 10 mm, and preferably between 2 and 4 mm depending on the volume of the tank, the distance between the first working tool and the bottom of the tank being preferably between 0.5 and 2 mm.
  • the minimum horizontal distance between the counter-tool and the inner wall of the tank is greater than 20 mm.

It should be noted that this characteristic favors the cooperation between the counter-tool and the first working tool rather than a scraping effect of the counter-tool which is almost nil or nonexistent due to the distance between the counter-tool and the inner wall of the tank. Moreover, the counter-tool has the advantage of working in synergy with the first slow-speed working tool for kneading pasta but can also be used to work in synergy with a palette or a whip for the threshing of creams or whipping liquids at higher speeds.

According to the invention, different types of movements or trajectories for the mixing tools can be envisaged.

In a preferred but non-exclusive embodiment of the food preparation apparatus according to the invention, the movement of the first working tool is a compound rotation movement, planetary type, the first working tool rotating, on the one hand, on itself around its axis of rotation S and, on the other hand, at the same time as the plate, around the axis P which is not coincident with the axis of rotation S.

According to a feature of this preferred embodiment, the plate is adapted so that the axis of rotation (P) of the counter-tool is, in the mixing position, near or even coincident with the center or the central axis of the tank.

It should be noted that the drive means of the tools may be located either above the tank or below it, which will then have openings allowing the passage of the tools and their adaptation on means of maintenance and training. In this respect and should be noted that according to the invention the mixing tools are preferably removable so as to facilitate their cleaning and that of the device.

According to an alternative embodiment of the preferred form of the invention, the rotational drive means of the first working tool and the plate are carried by a movable arm integral with the chassis and adapted to be, in the mixing position, placed above the tank.

In the context of this variant and according to a feature of the invention, the first working tool is a hook whose working limb has a curved lower end adapted to pass near the center of the tank and preferably exceed the center with an expanded end shape spoon-shaped, or spatula, to pick up the dough.

According to a characteristic of the preferred embodiment of the food preparation apparatus, the axis of rotation (S) is located at a distance from the axis of rotation (P) greater than 7 mm, such a distance being variable in a function of the volume and diameter of the vessel, the ratio of the desired speeds between the rotation of the first work tool and the counter-tool and the number of passage points in the tank to be scanned by the first work tool.

According to another characteristic of the preferred embodiment of the food preparation apparatus, the counter-tool has a concavity oriented towards the axis of rotation (P).

According to yet another characteristic of the preferred embodiment of the food preparation apparatus, the concave inner surface of the counter-tool partly envelops the surface swept by the convex outer surface of the first work tool during its rotation.

According to another characteristic of the invention, the first working tool is a kneading hook, a palette for threshing creams or a whip for whipping liquids.

According to a characteristic of the invention, the first working tool is a mixing hook, the hook and the counter-tool being made to have an elongate transverse cross-section, preferably oblong or oval to provide greater mechanical resistance, which gives their working limb, in particular to the active part intended to be in contact with the ingredients, an aerodynamic flattened shape as opposed to the shapes of known tools having a circular or square cross section. Preferably, the elongated transverse cross section of the first working tool and the counter-tool comprises a concave inner face and a convex outer face. According to an alternative embodiment of the invention, the working arm of the counter-tool has a width and a thickness which decreases from the adapter base to the end of the counter-tool opposite to the base of the tool. adaptation.

According to another embodiment of the invention, the working leg of the hook has a width and a thickness which decreases from a fixing base on the plate to the opposite end of the hook.

According to yet another embodiment of the invention, the end of the hook, opposite to the head, is bent towards the head and widened at the end like a spoon or spatula, advantageously upward, such a characteristic having the advantage of aerate the dough and have a better hold of small amounts of dough.

According to one characteristic of the invention, the concave inner surface of the counter-tool has, seen in the median vertical plane, a radius of curvature greater than the radius of curvature of the convex outer surface of the hook.

Of course, the various features, variants and embodiments of the invention may be associated with each other in various combinations to the extent that they are not incompatible or exclusive of each other.

In a preferred but non-exclusive embodiment, a food preparation apparatus according to the invention, as illustrated in FIG. figure 1 and generally designated by the reference A, comprises a frame 1 which supports a removable mixing container 2. According to the illustrated example, the container 2 is in the form of a vessel symmetrical with respect to a vertical central axis. The cooking apparatus A further comprises an arm 3 secured to the frame 1 and movable in rotation along a substantially horizontal axis between a working or mixing position M as illustrated. figure 1 and a raised position, not shown, in which the tank 2 can be easily removed. The arm 3 comprises, at a free end located above the tank, means 4 for holding and driving working tools, not shown, in motion inside the tank 2.

According to the illustrated example, the holding and driving means 4 are adapted to drive at least one tool according to a planetary type movement. For this purpose, the holding and driving means 4 comprise, as shown in FIG. figure 2 A movable platen 5 for rotation on itself about a vertical axis of rotation P that can be termed principal here that, in the example shown, is substantially coincident with the axis of central symmetry of the tank 2 and passes substantially through the center of the tank. The plate 5 also carries an eccentric turret 6 containing a ring, not shown, for rotating a work tool along an axis of rotation S which can be described here as secondary and which is, according to the illustrated example parallel to the main axis of rotation P. Thus, according to the illustrated example, the secondary rotation axis S is situated at a distance from the main axis of rotation P greater than 7 mm, this distance being able to vary according to the diameter of the tank 2.

The holding and driving means 4 are driven by an electric motor 7 integrated in the arm 3 by means of a kinematic chain in particular an epicyclic gear train according to a design widely known to those skilled in the art and therefore does not require further description.

According to an essential characteristic of the invention, the holding and driving means 4 are adapted to receive a set E of two working tools, in accordance with the invention, more particularly illustrated in FIGS. figures 3 and 4 .

The assembly E consists of a first working tool 10, called a hook, and a second working tool 11, called counter-tool, more particularly designed to be used in particular in combination with the hook 10, which may, however, to be used alone.

The hook 10 comprises an adaptation head 12 which has a pin 13 intended to be engaged in the turret 6 so as to ensure the attachment of the hook 10 and its rotational drive on itself as will appear later. The pin has a vertical axis Δ which, in the mixing position, is aligned with the secondary axis of rotation S. The hook 10 comprises from the adaptation head 12 a working branch 14 which has, at least in its active part intended to be in contact with the ingredients, here corresponding to the lower three quarters of the working limb 14, a form of helical general vertical axis may also be called spiral arm. Thus, the average fiber 15 of the working limb 14 corresponds to or describes a portion of a helix having a vertical axis offset with respect to the axis of the trunnion 13 which, as will appear, subsequently is merged with the axis secondary rotation S when the pin 13 is engaged in the turret 6. In addition, according to the illustrated example, the end 16 of the working limb 14, opposite the adaptation head 12, and substantially aligned with the axis Δ being curved towards the adaptation head 12 as shown in FIG. figure 4 . Moreover, the working limb 14 has, in its middle part at least, a cross section of generally oblong shape having a concave inner flank and a convex outer flank as shown in detail figure 4.1 . Finally, the width I 10 of the working limb 14 decreases from the adaptation head to near the end 16 and then increases again at the end 16 of the hook 10 to form a spoon or spatula remontante . In this regard, the width w 10 of the working arm 14 may have a maximum value of between 10 mm and 100 mm. In the same way, the thickness e 10 of the working limb 14 of the hook 10 can be understood between 3 mm and 50 mm depending on the size of the hook 10. While the height h 10 of the working limb 14, measured between the base of the adaptation head 12 and the lowest end of the branch 14, can then be between 10 cm and 150 cm depending on the size of the tank 2.

The counter-tool 11 has a fastening base 20 allowing a substantially rigid attachment of the counter-tool 11 on the plate 5 thus making a complete connection so that the counter-tool 11 is perfectly integral with the plate 5 and rotated by this latest. The counter-tool 11 also has a working limb 21 which extends downwards from the base 20. The working limb 21 has, in profile view as illustrated in FIG. figure 4 , an arcuate shape at least in its lower part intended to be in contact with food. Thus, the working limb 21 of the counter-tool 11 has an open C shape while the working limb 14 of the hook 10 has, in profile, a slightly closed spiral shape, as shown by comparison with FIG. figure 4 . In this regard, it may be noted that the radius of curvature of the inner face 22 of the counter-tool 11 is greater than the radius of curvature of the outer face 23 of the hook 10. Furthermore, the working arm 21 of the counter-tool 11 also has a substantially oblong cross section with a concave inner face and a convex outer face as shown in detail in FIG. figure 4.1 . In addition, the width I 11 of the working limb decreases from the adapter base 20 to the pointed end 24 of the branch 21 opposite the base 20, as shown in front view of FIG. figure 5 . In this respect, the width 11 of the working limb 21 may have a value of up to 120 mm. In the same way, the thickness e 11 of the working limb 21 of the counter-tool 11 may be in a median region between 1 mm and 35 mm depending on the volume of the vessel 2. It may also be noted that the counter-tool 11 has an arcuate shape in front view. It should be noted that the counter-tool 11 is made so that its lower end 24 is substantially at the same level as the lower end of the hook 10 when the counter-tool 11 and the hook 10 are fitted on the holding means and 4 of an apparatus A. In an alternative embodiment, the pointed lower end 24 of the counter-tool 11 may also be a little further away from the passage of the hook 10 to pick up the dough and bring it back to the hook 10.

By way of example, the mixing tools 10 and 11 thus formed are used in the following manner. First, the counter-tool 11 is adapted to the plate 5 at means, for example, pins 26 engaging in complementary bores formed in the plate 5 and not visible in the figures. The counter-tool 11 is then perfectly immobilized relative to the plate 5 which it is integral in rotation. Then, the adaptation of the hook 10 is performed by engaging the pin 13 in the turret 6. It should be noted that the method of fixing and driving a rotating tool such as the hook 10 is perfectly known to the skilled in the art and therefore does not require further explanation.

Compte tenu de sa fixation complète sur le plateau 5, le contre-outil 11 conserve toujours la même orientation relative par rapport à la cuve 2 pendant cette rotation, la concavité du contre-outil 11 étant orientée vers l'axe P. The start of the electric motor 7 associated with the holding and driving means 4, ensures a rotation of the counter-tool 11 around the main axis of rotation P in the direction of the arrow F1. Given its complete fixation on the plate 5, the counter-tool 11 always retains the same relative orientation with respect to the tank 2 during this rotation, the concavity of the counter-tool 11 being oriented towards the axis P.

Concomitant with the rotation of the counter-tool 11, the hook 10 experiences a complex rotational movement resulting, on the one hand, from the rotation of the hook 10 on itself around the secondary rotation axis S and, on the other hand, on the other hand, the rotation of this secondary axis S around the main axis of rotation P. Thus, the hook 10 is driven in a rotational movement on itself, indicated arrow F 2 at a speed greater than the speed the rotation of the plate 5 and therefore the counter-tool 11. In will be noted that the direction of rotation of the hook on itself 10 is preferably opposite to the direction of rotation of the counter-tool 11. According to the illustrated example the counter-tool tool 11 has a counterclockwise direction of rotation while the hook 10 has a direction of rotation on itself hourly.

In addition, the conformations of the hook 10 and counter-tool 11 are such that the minimum distance d between the convex outer face 23 of the hook and the concave inner face 22 of the counter-tool 11 is less than 10 mm. Similarly, the conformations of the hook 10 and the tank 2 and the position of the turret 6 on the plate 5 are such that the minimum horizontal distance D 10 , between the convex outer face 23 of the hook 10 and the inner wall of the tank 2, is less than 8 mm. In addition, it will be noted that the counter-tool 11 is disposed on the plate 5 at the periphery of the hook 10 and partially envelops the volume described by the rotation of the outer face 23 of the hook, the counter-tool 11 being however inside the volume swept by the hook 10 in the tank 2 during the rotation of the plate 5.

The use of the mixing tools according to the invention makes it possible to obtain, particularly in the case of kneading a bread dough, a good quality of dough and therefore of crumb. This good quality seems to result from the cooperation between the counter-tool and the hook, in particular the way the counter-tool 11 and the hook 10 interact to stretch, roll and fold successively the dough in formation as well as the slight shearing effect intervening, respecting the fibers of the dough, when the hook 10 passes close to the counter-tool 11.

It may be noticed that, according to the illustrated example, the pointed lower end of the counter-tool 11 is oriented forward with respect to the direction of rotation of said counter-tool 11 to direct the flow towards the hook 10. At this point, In this respect, it could also be envisaged to implement a counter-tool that is not arched but straight or inclined in front view to promote flow flow.

Of course various other modifications may be made to the invention within the scope of the appended claims.
Thus, in an alternative embodiment not shown, the hook may be replaced by a palette for threshing creams, or by a whip for whipping liquids rotating in synergy with the counter-tool to create flows and ensure aeration on a very wide range of work.
In addition, the present invention may be applied to mixing kneader mixing robots and mixer kneading culinary mixers, cookers or not, preferably planetary type, small, medium or large sizes. Thus, the apparatus may have very different sizes, the capacity of the tank may range from 3 to 1000 liters depending on whether the apparatus will be intended for domestic use, the hotel sector, bakeries or semi-industrial industries, industries and laboratories.
