Claims (6)

  1. Four à vapeur avec ventilation des parois externes de la chambre de cuisson (1) et comprenant un dispositif de mise sous vide entre la chambre de cuisson (1) et le conduit de ventilation (2.2), adapté pour extraire la vapeur hors de la chambre de cuisson (1) au travers d'au moins un trou (1.2) aménagé dans la paroi supérieure (1.3) de ladite chambre de cuisson (1), et dans lequel ledit dispositif de mise sous vide comprend une paroi mobile (3.1b), articulée avant ledit trou (1.2) et placée au-dessus de celui-ci, caractérisé en ce que ledit dispositif de mise sous vide comprend également deux parois fixes substantiellement triangulaires (3.1a), et dans lequel ladite paroi mobile (3.1b) est située entre lesdites deux parois triangulaires (3.1a) et est articulée à proximité d'un sommet desdites parois triangulaires (3.1a) de manière à constituer une rampe dont la paroi mobile inclinée (3.1b) réduit la section dudit conduit de ventilation (2.2).
  2. Four à vapeur avec ventilation des parois externes de la chambre de cuisson (1), selon la revendication 1, caractérisé en ce que lesdites parois triangulaires (3.1a) sont parallèles l'une à l'autre.
  3. Four à vapeur avec ventilation des parois externes de la chambre de cuisson (1), selon la revendication 1, caractérisé en ce que l'inclination de la paroi mobile (3.1b) varie entre une position complètement abaissée, dans laquelle elle obture ledit trou (1.2), et une position d'ouverture maximale correspondant au bord supérieur desdites parois triangulaires (3.1a).
  4. Four à vapeur selon l'une des revendications précédentes, caractérisé en ce qu'il contrôle la vapeur contenue dans la chambre de cuisson (1) en faisant varier la section de sortie (1.2) obtenue au moyen de la paroi mobile (3.1b) du tunnel cunéiforme (3.1) situé dans le canal (2.2) au travers duquel passe l'air qui refroidit les parois externes du four, de manière à créer un effet de vide variable du fait de leur combinaison.
  5. Four à vapeur selon l'une des revendications précédentes, caractérisé en ce que la paroi mobile (3.1b) est mise en rotation par un moteur pas à pas (4), ou autre mécanisme de régulation équivalent, en fonction de la température et de l'humidité présente à l'intérieur de la chambre de cuisson et en fonction de la vitesse de ventilation dans le conduit (2.2).
  6. Four à vapeur selon l'une des revendications précédentes, caractérisé en ce que la paroi mobile (3.1b) est réglée par un moteur électrique pas à pas (4), et dans lequel la position de ladite paroi mobile (3.1b) est commandé par une carte électronique au moyen d'un signal généré par des capteurs de température et d'humidité qui surveillent la quantité de vapeur contenue dans la chambre de cuisson (1).
