Claims (6)

  1. Dampfofen mit Belüftung der Außenwände des Kochraums (1), und der eine Vakuumvorrichtung zwischen dem Kochraum (1) und dem Belüftungskanal (2.2) umfasst, geeignet, den Dampf aus dem Kochraum (1) durch mindestens ein Loch (1.2) abzuziehen, das in der oberen Wand (1.3) des Kochraums (1) vorhanden ist, und worin die Vakuumvorrichtung eine bewegliche Wand (3.1b) umfasst, die vor dem Loch (1.2) schwenkbar angebracht ist und über ihm positioniert, ist, dadurch gekennzeichnet, dass die Vakuumvorrichtung auch zwei im Wesentlichen dreieckige feste Wände (3.1a) umfasst, und worin die bewegliche Wand (3.1b) sich zwischen den beiden dreieckigen Wänden (3.1a) befindet und nahe einem Scheitelpunkt der dreieckigen Wände (3.1a) schwenkbar angebracht ist, um eine Rampe zu bilden, deren geneigte bewegliche Wand (3.1b) den Querschnitt des Belüftungskanals (2.2) verkleinert.
  2. Dampfofen mit Belüftung der Außenwände des Kochraums (1) gemäß Anspruch 1, dadurch gekennzeichnet, dass die dreieckigen Wände (3.1a) parallel zueinander sind.
  3. Dampfofen mit Belüftung der Außenwände des Kochraums (1) gemäß Anspruch 1, dadurch gekennzeichnet, dass die Neigung der beweglichen Wand (3.1b) zwischen einer vollständig gesenkten Position, in der sie das Loch (1.2) verschließt, und einer maximalen Öffnungsposition variiert, welche der oberen Kante der dreieckigen Wände (3.1a) entspricht.
  4. Dampfofen gemäß den obigen Ansprüchen, dadurch gekennzeichnet, dass er den Dampf, der im Kochraum (1) enthalten ist, steuert, indem er den Ausgangsanschnitt (1.2) variiert, der mit Hilfe der beweglichen Wand (3.1b) des keilförmigen Tunnels (3.1) erhalten wird, welcher sich im Kanal (2.2) befindet, durch den die Luft, welche die Außenwände des Ofens kühlt, hindurch strömt, so, dass aufgrund ihrer Kombination ein variabler Vakuumeffekt erzeugt wird.
  5. Dampfofen gemäß den obigen Ansprüchen, dadurch gekennzeichnet, dass die bewegliche Wand (3.1b) von einem Schrittmotor (4) oder einem anderen äquivalenten Regelmechanismus gedreht wird, abhängig von der Temperatur und der Feuchtigkeit, die innerhalb des Kochraums vorhanden sind, und abhängig von der Belüftungsgeschwindigkeit im Kanal (2.2).
  6. Dampfofen gemäß den obigen Ansprüchen, dadurch gekennzeichnet, dass die bewegliche Wand (3.1b) von einem Schritt-Elektromotor (4) geregelt wird, und worin die Position der beweglichen Wand (3.1b) durch eine elektronische Karte mit Hilfe eines Signals gesteuert wird, das von Temperatur- und Feuchtigkeitssensoren erzeugt wird, welche die Menge an Dampf, die im Kochraum (1) enthalten ist, überwachen.
