Definitions

  • the present invention relates to a vapor discharge device of water for a steam oven.
  • a steam oven with an oven enclosure, the latter is generally brought to saturation with water vapor under atmospheric pressure by sending water to a heating element located in the enclosure. Food is cooked in this saturated oven enclosure in water vapor.
  • Some ovens of this type do not have a system allowing to evacuate the steam at the end of cooking. As a result, when the door is opened, a large amount of steam suddenly comes out of the oven and frees in the room in which it is placed. This causes inconvenience for the user and can even be dangerous (burns). In addition, any degradations can be caused in the surroundings by the release of vapor (walls, ceiling, etc.).
  • the document EP 0 624 759 describes a steam cooking oven equipped a steam evacuation device.
  • This oven has a device progressive evacuation of the steam produced inside the oven enclosure when the latter is in operation.
  • This evacuation device is triggered by control means before the end of cooking. It comprises an opening in a wall of the enclosure cooperating with a valve which, in a first position, closes this opening and, in a second position, is distant from it, thus allowing the evacuation of the vapor.
  • a ventilation turbine is optionally used to accelerate the speed of steam outlet from the oven enclosure.
  • This device of the prior art requires the use of an air guide towards the outside to conduct the steam from the oven enclosure to outside the oven.
  • This guide must be waterproof to control the flow of steam.
  • a complex system of seals must therefore be implemented to ensure this tightness.
  • the turbine used allows the suction of water vapor. inside the oven but causes a rapid drop in temperature and cooked food is not uniformly cooled. This can even cause in some cases a deterioration in the quality of cooking.
  • the present invention aims to provide a device for evacuating steam in an advanced steam oven. These measures preferably allow good evacuation of water vapor without cooling food too brutally, nor degrade the qualities of cooking.
  • the device it offers is a device for evacuating steam outside an enclosure of a steam oven which has means for sending fresh air into the oven enclosure and at least one outlet for the evacuation of steam outside the enclosure, means being provided to control the supply of fresh air into the oven enclosure and the opening and at least one exit closed.
  • the fresh air intake is advantageously distant from the outlet at least one in number.
  • a distance at least 10 cm advantageously separates the air inlet from each outlet steam.
  • the oven enclosure is closed through a door and fresh air is sent into the enclosure near the door. Even if all the steam is not yet evacuated when the door is opened, fresh air is at this level and the risk of burns is then very limits. In addition, fresh air is injected into an area where there is generally no food. These are therefore not suddenly cooled.
  • the fresh air is advantageously guided in a duct placed outside the oven enclosure from an inlet, disposed on one side of the oven enclosure opposite the side of the enclosure equipped with the door, close to the exit at least one in number, up to a opening made in the oven enclosure near the door.
  • a valve can then be provided to control the opening and closing simultaneously of the entry of the duct and the steam outlet at least one in number.
  • Two or more steam outlets are preferably provided, these outputs being for example distributed on either side of the inlet of the conduit.
  • At least one outlet has a leak in position closed corresponding opening and closing means. In this way, it it is not necessary to provide means (for example security slot) additional to avoid overpressure in the oven enclosure.
  • Fresh air is injected into the oven enclosure, for example using a fan.
  • the latter is advantageously arranged so that it promotes also the extraction of steam through the outlet at least one in number.
  • the steam ovens generally already have a fan for ensure the cooling of electrical and electronic components necessary for the power supply and the control of the oven. This same fan can be used at the end of cooking to evacuate the steam out of the oven. Thus during cooking the fan ensures the cooling of the components and at the end of cooking it also allows evacuation steam outside the oven enclosure.
  • the present invention also relates to a baking oven steam, characterized in that it is equipped with a steam evacuation device such as described above.
  • fresh air is injected into the oven enclosure, and at least one outlet is open to allow evacuation of steam out of the oven enclosure using the overpressure caused by air injection.
  • the drawing shows schematically a steam oven which conventionally comprises a substantially shaped enclosure 2 rectangular with an upper wall 4, a lower wall 6, three side walls 8 and a door 10.
  • the latter is intended on the one hand to close tightly enclosure 2 and secondly to allow the introduction and removal of food from this enclosure.
  • the oven enclosure 2 is intended to be brought to saturation with vapor of water at atmospheric pressure by sending water to a heating element 12 located in enclosure 2.
  • the tightness of the cooking enclosure must then be controlled so as not to have a leak of water or vapor under penalty of not be able to saturate the enclosure and thus guarantee good cooking quality food placed in the oven.
  • means are also provided for prevent pressurization of the oven enclosure.
  • a water injection device 14 makes it possible to send quantities from time to time of water on the heating element 12 in order to maintain the saturation in the enclosure 2.
  • This heating element 12 and this water injection device 14 are of the same type than those generally used in steam cooking ovens. they are therefore known to those skilled in the art and will not be described in detail here.
  • the oven shown in the drawing is also equipped with a device allowing the evacuation of the vapor located in enclosure 2 of the oven.
  • This device comprises in particular a fan 16, a valve 18 actuated by a jack 20 and a channel 22.
  • the fan 16 is a so-called tangential fan comprising a turbine rotating around an axis. The air enters axially in this fan and in comes out tangentially.
  • the fan is located at the rear of the oven, i.e. along the side wall 8 opposite the door 10 and outside the enclosure 2. Its outlet 24 is substantially parallel to the upper 4 and lower 6 walls of enclosure 2 and is directed upwards. This exit covers a large part of the length of the corresponding side wall 8. Openings 17 made at the rear of the oven are provided for supplying air to fan 16.
  • the fan 16 is intended first of all to provide cooling electronic and electrical components intended for supply and steam oven control. This fan 16 operates during all the cooking of the food placed inside the enclosure 2.
  • the channel 22 is arranged on the upper wall 4 and it connects the rear of the oven at the front of it.
  • This channel has an air inlet 26 and an air outlet fresh 28.
  • the inlet 26 is arranged above the outlet 24 of the fan 16 and the fresh air outlet 28 is located near door 10 and allows circulating air in channel 22 to exit into enclosure 2.
  • the channel 22 is for example made by making in the wall upper 4 of the enclosure 2 a groove extending from the rear side wall 8 towards door 10, for example in the middle position, and by fitting into this groove a U-shaped profile slightly shorter than the groove so to be able to produce on the side of the door 10 the fresh air outlet 28.
  • the valve 18 controls the opening and closing of the fresh air inlet 26 by means of the jack 20. In the closed position of the valve, the air leaving the fan 16 cannot enter channel 22. In the open position of the valve, this fresh air can enter the channel 22 and the valve 18 acts as a deflector favoring the introduction of air into the channel 22.
  • the closing of the steam outlets 30 by the valve 18 is not waterproof. In this way, it is possible to avoid the appearance of overpressures in enclosure 2 without having to provide other openings in the enclosure. Well heard, the leak at the steam outlets 30 is controlled in position valve 18 closed.
  • Figures 3 and 5 show the shape of the valve 18.
  • the latter comprises a horizontal cross member 32 and a vertical bar 34.
  • the horizontal cross member 32 is provided for closing the fresh air inlet 26 and the outlets of steam 30.
  • the vertical bar 34 makes it possible to control the movement of the horizontal cross member 32. It connects this cross member 32 to the jack 20.
  • the steam outlets 30 are oriented upwards. To achieve this orientation, they are made in an ear projecting from the side wall 8 back.
  • the horizontal crosspiece 32 of the valve 18 has, for each outlet 30, a housing of suitable shape.
  • this housing has the shape of a half cylinder circular low height reminiscent of a half moon.
  • the valve 18 is articulated around a horizontal axis 36. This axis is found substantially at the level of the upper edge of channel 22, on the side of entrance 26.
  • the upper part of the vertical bar 34 of the valve 18 is in the embodiment shown in the drawing in the form of a fork with a central slot. The latter is intended to allow the connection between the free end of a sliding cylinder rod and the valve 18.
  • the cylinder 20 used here is for example an electrically controlled wax cylinder. The rod of this cylinder acts perpendicular to the horizontal axis 36, thus making it possible to rotate the valve 18 around this axis.
  • the operation of the oven is then as follows. After placing food in enclosure 2, door 10 is closed and the oven enclosure is brought to saturation with water vapor under atmospheric pressure by sending of water on the heating element 12. During this preheating phase, the valve 18 is in the closed position. The enclosure 2 is therefore sealed, only the overpressure safety at outputs 30 being provided. During the phase cooking, successive water sendings maintain saturation in the enclosure 2. The valve 18 then remains still in the closed position and the enclosure remains so also. At the end of cooking, enclosure 2 is therefore saturated with water vapor at 100 ° C. To avoid any risk of burns when opening the door, burns caused by steam coming from enclosure 2, the exhaust system of steam described above is activated a few minutes before the end of the cooking.
  • the valve 18 opens thus allowing fresh air to be introduced into enclosure 2 and the steam outlet via the outlets 30.
  • the flap in open position acts as a deflector favoring the introduction of air fresh from fan 16 in channel 22. This air leaves the channel through the outlet 28 and creates a slight overpressure inside the enclosure 2 thus driving out the water vapor in it.
  • the only possibility for steam is to exit through outlets 30, channel 22 being overpressure.
  • the outputs 30 are oriented upwards.
  • the air flow coming out of the fan 16 is also oriented upwards.
  • the flow of fresh air brings with it the steam leaving the enclosure 2.
  • the steam outlet is favored and mixing this vapor with fresh air immediately at the outlet allows a cooling of this water vapor thus preventing any risk of burns.
  • the outlets 30 are preferably located above of outlet 24 of fan 16.
  • deflectors 38 can be provided between the outlet 24 of the fan 16 and the steam outlets 30.
  • the oven After a valve opening time, calculated based on flow rates fresh air inlet and steam outlet and the volume of the enclosure, the oven can be opened safely.
  • the enclosure 2 of the oven can be emptied of water vapor in a relatively short time (less than 3 minutes) for the greatest safety and for the comfort of the user.
  • This device also prevents rejection of hot steam outside the oven making it possible to avoid degradations at the level for example of the ceilings or surrounding walls. Neither does hot steam circulate in the oven outside the compound. The steam coming out of the oven enclosure is all immediately mixed with fresh air. This water vapor is driven out, not drawn in, so that steam does not enter the fan. this allows the fan to work in good conditions guaranteeing a better longevity.
  • the fresh air outlet at the remote enclosure for example at least 10 cm, steam outlets outside the enclosure.
  • fresh air is sent to the door side of enclosure 2. So this door is cooled first and the steam near this door is replaced very quickly by cooler, unsaturated air. An opening accidental door before the end of the water vapor evacuation phase is therefore less dangerous for a user.
  • valve of the fan
  • the arrangement of the valve, of the fan can be modified without departing from the scope of the invention.
  • a separate valve can be provided for the fresh air inlet and the steam outlet.
  • the valve control means can be different.
  • the cylinder wax can be replaced by any means such as for example an electromagnet, a electric actuator, etc ...
  • a channel guiding the fresh air before its injection into the oven enclosure is optional.
  • its realization can be achieved by any means and not only as described upper.
