Description

The present invention relates to an electrically heated oven intended in particular industrial cooking operations, mainly for baking.

There are two categories of ovens, namely static heating ovens and forced circulation ovens. In a static heating oven, a first battery of electrical resistors is arranged at the level of the ceiling of the enclosure while a second battery of electrical resistors is placed nearby and below a refractory slab on which the products to be cooked are placed, slab also called refractory hearth. The electrical resistances of the second the function of the battery is to heat the refractory slab. In the case of a bakery, we obtain at the end of cooking an aspect which is not homogeneous on the entire outer periphery of the product, in particular bread, the part in contact with the refractory tile having a more accentuated cooking surface The use of this first category of oven with static heating and hearth refractory is therefore recommended when trying to give the product the appearance of traditional and traditional cooking.

The forced circulation oven has electrical resistances and a ventilation system circulating the air heated by said resistors in the oven enclosure, which ensures a substantially uniform temperature throughout the interior volume of said enclosure.

Regardless of the search for the traditional cooking aspect and artisanal, we use one type of oven rather than the other depending on the products to be bake, for example croissants, in a forced circulation oven, pizzas in a static heating oven.

These two categories of ovens have a completely different structure, which which requires the manufacturer to supply components and circuits independent manufacturing and what does not allow to have any flexibility in terms of customer demand.

The aim set by the applicant is to overcome these drawbacks.

This goal is perfectly achieved by the electrically heated oven of modular design of the invention.

  • It is an oven which includes:
  • a) a basic structure which comprises a chassis having a front opening and n superimposed doors for closing said front opening, and
  • b) n modules, each being mounted in the interior volume of the chassis, facing a given door, said modules being chosen from the following two types:
  • b 1 ) a first type of module for cooking with ventilated heating comprising:
    • a box having a front opening, internally equipped with one or more electrical resistances and a ventilation system and each lateral upright of which comprises x slides for x cooking plates,
  • b 2 ) a second type of module for static heating cooking comprising:
    • possibly a first battery of electrical resistors
    • y sets each comprising a refractory hearth and a second battery of electrical resistors arranged immediately under said refractory hearth, being there equal to or greater than 1
    • possibly a box having a front opening and containing the y assemblies and possibly the first battery of electrical resistances.
Thus the particularity of the invention is to propose an oven which can be assemble as a ready-to-assemble (kit), from a common basic structure capable of accommodating a plurality of modules, each module being chosen in depending on the destination of the oven It will be an oven that will be completely forced circulation, if the modules installed are all of the first type; it will be an oven which will be totally static heated if the modules installed are all of the second type. It will be a combination oven, both forced circulation and static heating if the modules installed are of two types.

This last structure, which is characteristic of the invention, in which the n modules are chosen from both the first module for ventilated heating cooking and the second module for static heating cooking presents a significant advantage for the user, since it can, in the same oven, ensure thawing of its products in the module (s) of the first type and artisanal and traditional finish of products thawed in the modules of the second type. Of course, this could be done from two ovens distinct, each of a given type, but in this case this can be done without excessive handling since it is only sufficient to transfer the products from cooking plates on the refractory hearths, in the same oven.

In a preferred embodiment of an oven, the structure of which base has two superimposed doors, the first type of module has four hobs and the second type of module has two sets each comprising a refractory hearth and a second coil of resistors electric.

The present invention will be better understood on reading the description which will be made of a preferred embodiment of a heating oven electrical modular design illustrated by the accompanying drawing in which the single figure is a schematic perspective representation of the structure of base of the oven and three combinations of modules to make three different types of ovens.

It will be noted that the representation which is made of the various components of the oven of the invention, in the single figure, is a particularly representation simplified and which strictly concerns only the main components which are features of the invention. In particular, not all usual components, which are well known to those skilled in the art, and which enter in the composition of traditional ovens either with forced circulation or with heating static by refractory hearth.

The first component of the oven of the invention is the basic structure 1 which comprises a frame 2 with a front opening 3, said opening possibly be closed by n superimposed doors 4, the number n of doors 4 being equal to two in the example illustrated in the figure. Of course each door 4 is mounted on the chassis 2, laterally along the front opening 3 by means of hinges 5. Said doors 4 have their closing means, of which only the handles 6 have been illustrated, and their sealing means for ensuring the watertight closure of the oven when both are closed.

The basic structure 1 also includes all the usual means for electrical control, control of on / off functions, temperature control, etc. which are well known in electrically heated ovens. In the example illustrated, these means have been grouped in a side portion 2a of the frame 2 adjacent to the opening 3.

From this basic structure 1, it is possible, by assembling other components which will be described now, to realize three types different from ovens, namely a forced circulation oven, a deck oven refractories and a combi-furnace having a forced circulation compartment and a refractory hearth compartment.

This is achieved through two types of modules which are designed to be able to be mounted in the interior volume of the chassis 2.

The first type of module 7 is a module for forced circulation cooking. It comprises a box 8 having a front opening 9. The rear part 8a of said box 8 is provided with one or more batteries of electrical resistors, not shown in the figure, and with a ventilation system 10. Both amounts side 8b of the box 8 x comprise runners 11, including brackets, which are disposed in facing relation so that the two slides 11 can support the same hotplate. In the example illustrated, the number x of slides 11 is equal to 5, so that the module 7 of the first type is intended to receive five cooking plates.

In the first example of a forced circulation oven, two modules 7 of the first type are mounted in the interior volume of the chassis 2 of the structure base 1, the front opening 9 of each module 7 being opposite each door 4 of the basic structure 1. In the end, therefore, there is a two-door oven with eight hobs, said oven being totally forced circulation with two 1O ventilation systems.

La première batterie 12 de résistances électriques 13 est placée sous la paroi supérieure du châssis 2 ou, de préférence, du caisson du module 21.The second type of module 21 is a module for static heating cooking which comprises a first battery 12 of three electrical resistances 13 and y sets 14, each set comprising a refractory hearth 15 and a second battery 16 of electrical resistances, placed immediately under said refractory hearth 15 at a short distance d therefrom. The battery and the y assemblies are preferably mounted in a box (not shown) similar to that 8 of the first module 7. In the example illustrated, the number y of assemblies 14 is equal to two. There is therefore a lower assembly 14 'and an upper assembly 14. When this module 21 of the second type is mounted in the interior volume of the chassis 2, opposite a given door 4, the lower assembly 14' is partly lower portion of this interior volume, while the upper assembly 14 has an intermediate arrangement inside said volume between the first battery 12 of electrical resistors 13 and the refractory hearth 15 'of the second assembly 14'. The first battery 12 of electrical resistors 13 is placed under the upper wall of the chassis 2 or, preferably, of the box of the module 21.

The oven of the second variant, illustrated in the figure, is composed of upper part, opposite the upper door 4, of a module 21 of the second type, with static heating with refractory hearth and at the bottom, facing the door lower 4 ', of a module 7 of the first type with forced circulation. According to this second variant, there is therefore a combi steamer with a compartment for forced circulation with four hotplates and a compartment with two soles refractory.

In the third variant embodiment, illustrated in the figure, the oven is entirely static heating, being fitted internally with four refractory hearths 15a to 15d, that is to say four assemblies each comprising a refractory hearth and a second battery of electrical resistors placed immediately under said refractory hearth at a short distance d from the latter. It should be noted that in the three second batteries which are placed immediately under the three upper refractory hearths 15 a , 15 b , 15 c , the electrical resistances are used both for heating the refractory hearth 15 a , 15 b , 15 c , under which they are immediately disposed and also for heating the volume which is contained between said refractory hearth and that which they overhang. It is this latter role which is imparted to the first battery of electrical resistances which is located immediately under the upper wall of the chassis 2. It is understood that when an oven is made comprising only refractory hearths and batteries of electrical resistors, such as in the third alternative embodiment - without box - the two second modules 21 which are mounted inside the basic structure 1 are not strictly identical since the upper module comprises a first battery 12 of electrical resistors 13 while that the second, lower module does not have one.

The basic structure 2 necessarily includes all the means of mounting and electrical connection of electrical resistance batteries, means of ventilation and refractory soles.

Insulating material is placed between the base structure 2 and the boxes 7 of the modules and also between the superimposed boxes. When closing the doors 4,4 ', these apply to the front faces of the boxes, which are advantageously provided with a seal.

The present invention is not limited to the embodiments which have just been described by way of non-exhaustive examples, all kinds different assemblies obtainable from the basic structure at n doors and module types described above, each module can have a x different number of hobs and y different number of sets to refractory soles.
