Il existe deux catégories de fours , à savoir les fours à chauffage statique et les fours à circulation forcée. Dans un four à chauffage statique , une première batterie de résistances électriques est disposée au niveau du plafond de l'enceinte tandis qu'une seconde batterie de résistances électriques est disposée à proximité et en-dessous d'une dalle réfractaire sur laquelle sont placés les produits à cuire, dalle dénommée également sole réfractaire. Les résistances électriques de la seconde batterie ont pour fonction de chauffer la dalle réfractaire. Dans le cas d'un four de boulangerie, on obtient en fin de cuisson un aspect qui n'est pas homogène sur toute la périphérie extérieure du produit , notamment du pain, la partie en contact avec la dalle réfractaire ayant superficiellement une cuisson plus accentuée . L'utilisation de cette première catégorie de four à chauffage statique et à sole réfractaire est donc préconisée lorsque l'on cherche à donner au produit l'aspect de cuisson artisanale et traditionnelle.There are two categories of ovens, namely static heating ovens and forced circulation ovens.
